Red Coleslaw

The colour of this coleslaw is amazing and it’s just the thing to serve with sandwiches or a quiche.

Equipment

  • Weighing scales

  • Knife

  • Chopping board

  • Grater

  • Bowl

  • Measuring spoons

  • Mixing bowl

Method

  • Step 1

    Mix the mayonnaise, honey, mustard and pepper together in the salad bowl.

  • Step 2

    Top and tail the carrot and grate. Grate the beetroot.

  • Step 3

    Top and tail the carrot and grate. Grate the beetroot.

  • Step 4

    Finely shred the cabbage.

  • Step 5

    Mix the mayonnaise, shredded red cabbage, grated beetroot and carrot together until all the vegetables are coated.

  • Step 6

    Add some freshly ground black pepper to taste (if using) and the raisins if you are using them.

  • Step 7

    Tip into your salad bowl and serve.

low-fat mayonnaise
20g
raisins

Top tip(s)

A quick way to make sure the dressing coats the coleslaw is to place all the ingredients into a large plastic tub. Make sure the lid is on securely then shake it up.

Something to try next time

You could try adding 1 x small finely sliced red onion to add more flavour.

If you want an even healthier mix, you could replace half the mayonnaise with low-fat natural yoghurt.
