Cheesy leek parcels

These tasty little parcels are perfect for 10-11-year-olds. Children will use a hob with support from an adult and develop their cutting skills using a number of different techniques. They will learn how to gauge quantities using a spoon, and shape and mould the filo pastry into an attractive parcel. They will also experience how to safely put food in and take food out of the oven, wearing oven gloves.

Equipment

  • Baking tray

  • Chopping board

  • Knife

  • Colander

  • Paper towel

  • Frying pan

  • Wooden spoon

  • Pastry brush

  • Spoon

Steps

  • Step 1

    Preheat oven to 180C/fan 160C/gas mark 4. ADULT SUPERVISION. 

  • Step 2

    Grease the baking tray.

  • Step 3

    Slice the leek and place it in the colander. ADULT SUPERVISION.

  • Step 4

    Step 4

    Wash the leek and pat dry with a paper towel.

  • Step 5

    Place the leek in the saucepan and cover.

  • Step 6

    Cook the leeks on the hob, on a low heat, for 5-10 minutes until soft, stirring occasionally.  ADULT SUPERVISION.

  • Step 7

    Step 7

    Turn off the hob and add the soft cheese and nutmeg to the leeks. ADULT SUPERVISION.

  • Step 8

    Stir the ingredients thoroughly and put to one side. ADULT SUPERVISION.

  • Step 9

    Place a sheet of pastry on a clean surface.

    Brush the pastry rectangle with oil.

  • Step 12

    Using the dessert spoons, place 1/6 of the mixture at the bottom of the pastry.

    Fold the bottom-right corner over to the left side to form a triangle. ADULT SUPPORT.

  • Step 13

    Continue to fold in triangles from one side to the other until you reach the end of the strip.

  • Step 14

    Place the triangle on the baking tray with the end of the strip underneath the triangle.

    Brush the parcels with the remaining oil.

    Bake for 20-25 minutes. ADULT SUPPORT.

olive oil

leek (approx 200g), topped and tailed
100g
reduced-fat soft cheese
¼ x 5ml spoon
nutmeg
6 sheets
filo pastry, ready-rolled

Handy Hint(s)

Place a piece of damp paper towel under the chopping board to keep it steady.

Serve the cheese and leek parcels with salad.
