Super lentil and vegetable soup

This recipe is great during colder months and the lentils are a rich source of protein. With all of the vegetable cutting needed, children will hone their cutting skills using different techniques, such as bridge, fork and secure/claw. They will also get the opportunity to use the hob on their own (with a little adult support).

Equipment

  • Chopping board

  • Knife

  • Peeler

  • Saucepan

  • Wooden spoon

  • Measuring jug

Steps

  • Step 1

    Peel and chop the onion. ADULT SUPPORT.

  • Step 2

    Top and tail the carrot, then peel and dice. ADULT SUPPORT.

  • Step 3

    Top and tail the leek, remove the outer layer, then peel and slice. ADULT SUPPORT.

  • Step 4

    Peel and cube the potato. ADULT SUPPORT.

  • Step 1, 2, 3, 4 & 5

    Step 5

    Cut the celery into 2cm pieces. ADULT SUPPORT.

  • Step 6

    Step 6

    Heat the oil in a saucepan and fry all of the vegetables, except the potatoes, for 5 minutes. ADULT SUPPORT.

  • Step 7

    Stir in the flour and cook for 2 minutes. ADULT SUPPORT.

  • Step 8

    Dissolve the stock powder in boiling water. ADULT SUPPORT.

     Add the stock to the saucepan and bring to the boil. ADULT SUPPORT.

  • Step 10

    Add the potatoes and red lentils. ADULT SUPPORT.

  • Step 11

    Place a lid on the saucepan and allow the ingredients to simmer for 30 minutes.

  • Step 12

    Serve.

Try replacing the leek and carrot with different vegetables.
