These yummy muffins are packed with apple, carrot and raisins - perfect to bake on a chilly autumn day.

Equipment

Method

  • Step 1

    Preheat the oven to 200°C/180°C /gas mark 6.

  • Step 2

    Put the paper cases into the tin.

  • Step 3

    Wash the apple, remove the core and cut into 1cm cubes.

  • Step 4

    Wash the carrot, chop the ends off, peel and grate it. Add the raisins.

  • Step 5

    Mix the flour, porridg, oats, sugar, bicarbonate of soda and ground cinnamon in a bowl.

  • Step 6

    Place the oil in the measuring jug.

  • Step 7

    Beat the eggs in a second jug and add to the oil.

  • Step 8

    Add the milk and apple juice to the oil and egg mix.

  • Step 9

    Add the vanilla extract to the wet ingredients.

  • Step 10

    Add the chopped apple, grated carrot and raisins to the dry ingredients and mix.

  • Step 11

    Pour the wet ingredients into the dry ingredients. Stir until combined.

  • Step 12

    Spoon the mixture into the paper cases.

  • Step 13

    Mix the Demerara sugar and porridge oats and sprinkle on top.

  • Step 14

    Cook for 16 minutes or until golden.
