Method

  • Step 1

    Scoop out pumpkin flesh, remove seeds and chop into 2cm pieces. You will need 650g.

  • Step 2

    Peel the apple, onions and potato. Chop into 1cm pieces.

  • Step 3

    Heat the oil in the large pan and cook the onion, apple and potato for 5 minutes until soft.

  • Step 4

    Add the pumpkin and cook for a further 5 minutes.

  • Step 5

    Measure the boiling water into the measuring jug. Crumble in the stock cube and stir. Pour into the saucepan and add the cumin.

  • Step 6

    Bring the soup to the boil, then simmer for 30 minutes.

  • Step 7

    Season with black pepper (if using). Take off the heat and blend until smooth.

  • Step 8

    Serve in bowls, mugs or a flask.
